Sunkist® Sparkling Moro Orange Spritzer Recipe

(Serves 4)

Ingredients:

  • • 1/4 cup freshly squeezed Sunkist® Moro orange juice
  • • 2 cups freshly squeezed Sunkist grapefruit juice
  • • 1/2 cup sugar or your favorite sugar substitute
  • • 2 cups club soda or sparkling water
  • • Moro oranges, sliced, for garnish

Instructions:

  • • Combine juices and sugar in pitcher. Stir well to dissolve sugar.
  • • Add club soda or sparkling water.
  • • Pour into serving glasses and garnish with Moro orange slices.

Grapefruit 'N' Chicken Salad Recipe

(Serves 4)

A spicy addition that you would never think to find in a dish like this! Grapefruit 'N' Chicken Salad delivers a wonderful taste and beautiful presentation.

Ingredients:

  • • 2 Sunkist® red grapefruit
  • • 1/4 cup canola or vegetable oil
  • • 2 tsp. sugar or your favorite sugar substitute
  • • 1/4 tsp. salt
  • • 1/8 tsp. pumpkin pie spice
  • • 1 1/2 cups sliced cooked chicken
  • • 1 small avocado, sliced
  • • 2 Tbsp. sliced green onion

Instructions:

  • • Cut grapefruit in half. With a grapefruit spoon or serrated knife, cut around each section to loosen segments from the membrane Reserve sections.
  • • Squeeze juice from shells to equal 1/3 cup. With spoon, scrape grapefruit shells clean; chill.
  • • Combine the reserved grapefruit juice, oil, sugar, salt and pumpkin pie spice. Pour over reserved grapefruit sections, chicken, avocado and green onion; mix lightly and chill.
  • • To Serve: Spoon chicken mixture into shells. Garnish with additional grapefruit sections and avocado slices, if desired.

Lemon Herbed Rice Recipe

(Serves 4)

This is one of those side dishes that never gets old! Serve Lemon Herbed Rice as a side with a meat dish and salad or vegetable. This recipe is simple to make and super flavorful with the fresh taste of lemon and herbs.

Ingredients:

  • • 2 cups water
  • • 2 Tbsp. butter or margarine
  • • 1/2 tsp. garlic salt
  • • 1 Sunkist® lemon, grated zest
  • • 1/2 Sunkist lemon, juiced
  • • 1 cup uncooked rice (any kind)
  • • 2 Tbsp. sliced green onion or chives
  • • 2 Tbsp. chopped parsley
  • • 1 Tbsp. chopped assorted fresh herbs (basil, dill, tarragon, thyme, etc.)

Instructions:

  • • In saucepan, bring water, butter, garlic salt, lemon zest and juice to a boil. Stir in rice and reduce heat, then cover and simmer for 20 minutes or until rice is tender and liquid has been absorbed. Just before serving, stir in onion, parsley and herbs.
